What sets our Vino Cotto Intenso apart from others is the use of honeydew grapes, a rare vine that is typical of the Calanchi des Piceno.
For generations it has been used for the specific production of vino cotto. This particular grape gives the aroma of the wine a sublime fragrance and taste
The grapes are carefully picked by hand and processed immediately. Then the must is cooked in a traditional copper kettle until a very high sugar content is reached. This means that part of this sugar content is retained in the wine even after fermentation.

The last important step is the long aging in oak barrels, which makes the Vino Cotto Intenso a real delicacy, which goes perfectly with the PIMPINELLI with Vino Cotto Terre dei Calanchi Piceni.

The distinctive barrique taste makes the Vino Cotto Saggio a special riserva of our winery,
with a fine, characterful and unique taste.
Our Vino Cotto is made from a careful and selected harvest of the best grapes (Moscato giallo, Moscato bianco, Sangiovese), cultivated in the beautiful hills of the Calanchi Piceni, where the vines reach their fullest development.
The grapes are carefully hand-picked and processed immediately, then the must is cooked in a traditional copper kettle, as the oldest recipes require.

With the PIMPINELLI biscuits from Terre dei Calanchi Piceni,
prepared with vino cotto and green anise from Castignano, the enjoyment is increased even more.
